- 1 tbs. coconut oil
- 1 lb. ground chicken (can use turkey if preferred)
- 2 tbs. honey
- 3 tbs. soy sauce or coconut aminos
- 1 tbs. Szechuan sauce
- 2 cloves garlic, minced
- 1/2 tsp. fresh ginger, minced
- 1 tsp. sesame oil
- Romaine or butter lettuce for wraps
- 1/4 cup shredded carrots
- 1/2 cup cashews
- 1/2 cup green onions
Heat the coconut oil in a pan on medium heat. Cook the chicken in pan until browned and cooked through.
Whisk together the honey, soy sauce or coconut aminos, Szechuan sauce, garlic, ginger, and sesame oil.
Reduce the heat, add the sauce, and allow to simmer until the sauce is thick and sticky.
Assemble your wraps by filling large lettuce leaves with chicken and topping with carrots, cashews, and green onions.
