Veggie Detox Bowl

Use leftover quinoa and sweet potatoes to quickly throw together this bowl. If you eat meat, try adding some chopped chicken.

Ingredients

  • 8 cups spinach
  • 2 cups cooked quinoa
  • 1 cup black beans
  • 1 cup mashed sweet potato
  • 8 tbs. hummus
