- 1 tsp. garlic, minced
- 1/2 cup onion, chopped
- 1 lb. ground turkey
- 1 tbs. chili powder
- 1 tbs. cumin
- 1 (15 oz.) can black beans
- 1 cup salsa
- 1 lb. baby bell peppers
- 1/2 cup cheese
Preheat the oven to 375 degrees F. Slice the bell peppers in half and remove the seeds. Bake the peppers in oven for 20 minutes.
While the peppers are cooking, coat a large skillet with olive oil and heat over medium heat. Add the garlic and onions, stirring to cook until the onions are translucent.
Add the ground turkey, chili powder, and cumin, and cook until the turkey is completely browned.
Reduce the heat to a simmer and add the beans and salsa.
Stuff the peppers with the ground turkey mixture and top with cheese.
